When we lived in Florida our son had a friend whose mom was the Quintessential Southern hostess. When she brought snacks for the t-ball team, she didn’t just bring snacks, she brought a table, table cloth, matching napkins, plates, cups, homemade snacks, served of course of a beautiful matching platter! I felt so inadequate yet inspired! At Christmas she gave all her mom friends a jar of this Cranberry Relish, of course with an adorable matching bow and card with the recipe printed in a cute font….oh my! Anyhow, in the spirit of Inspiration and Southern cuteness, here is my Favorite Cranberry Relish recipe!
Southern Cranberry Relish
1 bag fresh cranberries
2 c sugar (you can use less and make it less sweet)
1 lg box cherry jello
1 can crushed pineapple, undrained
1 c chopped pecans
Put cranberries in medium pot and cover with water. Bring to a boil and boil until cranberries POP open! (This can be FUN for little kids to listen to!)
Once popping stops, turn off heat. Add jello and sugar and stir until dissolved. (Again another fun science lesson for kiddos). Once dissolved, add undrained crushed pineapple and pecans. Pour into serving dish or mason jars if you’re giving as gifts. Allow to cool slightly then refrigerate! Enjoy!
